How to Store and Preserve Ratnagiri Alphonso Mangoes

Mangoes are delicate tropical fruits. Storing them incorrectly—especially putting them in the fridge too early—can permanently ruin their texture and flavor. Follow this ultimate guide to mango preservation.
Phase 1: Counter-Ripening (Do Not Refrigerate Yet!)
When your Aam Native box arrives, the mangoes may be semi-ripe to protect them during transit. Do not put raw or semi-ripe mangoes in the refrigerator. Cold temperatures halt the ripening process and cause "chilling injury," leading to hard, flavorless fruit.
- Keep them in the box: Leave the mangoes nestled in their hay inside the Aam Native box.
- Room Temperature: Store the box in a cool, well-ventilated area away from direct sunlight.

Phase 2: Refrigeration (Only When Ripe)
